Steak It Out! Tip
You will be the royal food providers to all you know with the feast pack and simple roasted root vegetables. In a large iron skillet cut up chunks of carrot, parsnips, turnips, rutabagas, beets (as many varieties as you can find), fingerling potatoes, and onions. Pour olive oil into the frying pan and mix the vegetables with your hands so each piece is coated with oil. Add salt, pepper, garlic powder. Bake at 425 for forty-five minutes or until the larger pieces are fork tender. The longer you bake the more concentrated the flavors will become, but be careful not to burn. When you take the vegetables out of the over spray them with a butter or olive oil flavored cooking spray and then sprinkle with sea salt. You better hope you made enough, because you may have to fight off the appreciative crowds.
You can serve the vegetables hot or take some out early and put them in a salad.
Out of This World Pot Roast Sandwich Recipe
Two pounds of cooked pot roast or other left-over roast (cubed)
6 Onion or Sesame Seed Rolls
Dijon Mustard or sweet-hot mustard
1 large Red Onion (diced)
6 tablespoons of Mayonaise
1 large Carrot (grated)
6 slices of prosciutto (cut into long slivers)
Fresh basil
Butter
Cube your pot roast and place in a hot frying pan. Stir and spread the roast around just long enough to take the chill off from storage in the refrigerator. Do not re-cook. Pour into a mixing bowl. Add the onion, carrot, prosciutto, and Mayonaise. Tear two handfuls of basil into pieces and add to the pot roast filling. Mix, sprinkle with sea salt and freshly ground pepper. Set aside.
Split your rolls. On the bottom of the top roll spread a thin skin of Dijon Mustard or a sweet-hot mustard and place a slice of swiss cheese over the mustard. Sprinkle with crumbled coat cheese. Under a broiler lightly toast the split rolls making sure the cheese is melted.
Remove the split rolls from the broiler and immediately butter the toasted bottom roll. Add a pile of the pot roast mix to the bottom roll half and top with the toasted/cheesed half and serve.
Variations:
Add a teaspoon of horseradish to the mixture
Use toasted slices of Roman Meal whole grain bread instead of buns
Bake your own whole grain buns
