How To Cook Lobster
Boiling Lobster
Put approximatly two quarts of water in a large lidded pan for every pound of lobster.
Add about one tablespoon of salt for every quart of water.
Drop your live lobsters in the boiling water; when it returns to a boil, cover the pan and let cook for eight minutes. The lobsters will continue cooking in the shell, so do not cook too long. When in doubt, remove early. Do not overcook.
Steaming Lobster
Use three or fout inches of salted water in a large pot. Arrange a steaming basket well above the water level. When the water begins to boil drop the lobsters into the basket and cover. You may squeeze lemon juice over the lobsters as they steam.
Lobtser shells turn a bright red as they cook. Serve with fresh lemon and lots of melted butter to dip your lobster pieces in.
